Parmigiano Reggiano

If it says “Parmesan cheese” without the words Parmigiano Reggiano, it’s almost certainly not authentic

Check the Rind Markings

  • Authentic wheels are branded with the dotted words “Parmigiano Reggiano” all around the rind.
  • You might also see the Consorzio seal and a casein plaque (small ID tag embedded in the rind).
  • If buying a wedge with rind, look for those dotted markings.

Look for PDO Labeling

  • In the EU: It must carry the PDO (Protected Designation of Origin) label.
  • Outside the EU (like in the U.S.): Look for packaging that explicitly says “Parmigiano Reggiano” rather than just “Parmesan.”

Check the Aging Statement

  • Authentic Parmigiano Reggiano is aged a minimum of 12 months.
  • Often, you’ll see “24 months,” “30 months,” or even “36 months” listed — the longer the aging, the more complex and crumbly the flavor.

Country of Origin

  • True Parmigiano Reggiano will always say “Product of Italy.”
  • If it’s made elsewhere, it’s Parmesan (not the real deal).

Visual & Flavor Cues

  • Texture: Grainy, crumbly, and hard — not rubbery.
  • Color: Pale yellow to deep golden.
  • Taste: Nutty, savory, slightly fruity, with tiny crunchy crystals (amino acid clusters).
