Midwest Whiskey Born & Raised – In 2010, Union Horse was founded with the idea of bringing something special and unique to our hometown of Kansas City that hadn’t been done since before Prohibition. Our collective effort to produce grain-to-glass whiskies was born from this idea. In a landscape dominated by the big brands, we knew there would be no shortage of obstacles along the way. But as we all know, things that are worthwhile don’t come easy. And when you’ve got the DNA of an underdog, you’re no stranger to adversity. We’ve fought the battles and faced the storms head on. This is the fighting spirit that lives in us and in our craft.
Union is the back of our team and our process. It’s the collective energy that flows from both Kansas and Missouri that creatively powers our hometown of Kansas City. It’s in the process of our spirits, combining the best locally sourced ingredients.
The Future Begins Here – From milling the finest quality Midwest grains to the barreling and bottling, everything is done in house and by hand. For our team it’s a sign of respect – for the traditions of our industry, for the family and ultimately for you.
Distilled To The Highest Standards – All spirits are distilled in our 500-gallon, column, pot still. Our still, lovingly known as “Chester Copperpot” (named after one of our favorite 80’s movies, The Goonies), was custom built by Vendome Copper & Brass Works in Louisville, KY. During all distillations, testing is done to ensure the highest standards are being met for continual purity every step of the way.
Aged To Perfection – Before entering the barrel, the distilled spirit will be proofed down to an ABV of 55% to pull out more complex flavors (caramels, butterscotches, vanillas) as our whiskey ages. Our 10,000 square foot barrel house is non-climate controlled which helps in the maturation process. As the Midwest seasonal temperatures change so does the temperature in our warehouse. The fluctuation of temperatures creates bolder flavors that are then imparted into the whiskey as the barrel expands and contracts. Meaning, our home in the heartland is the perfect setting for our craft.
Handcrafted From Start To Finish – After two and half years, each barrel will get tested, but won’t be emptied until it hits a maturity level of around five-plus years. When the whiskey hits that age, we will begin again the testing process on certain barrels at different rack levels then we’ll proof them, blend, and then sample again. Each whiskey is tested for complexity and full flavor before moving into the bottling stage. All bottling and labeling is done in-house and Patrick Garcia, our Master Distiller and Co-founder, hand signs and numbers each bottle of Reserve Straight Bourbon, Reunion Straight Rye, and Barrel Strength Rye whiskies.
