The California Milk Advisory Board is seeking America’s best professional chefs and most promising culinary students to create innovative new pizzas in three categories:
Plant-Forward Pizza – A plant forward pizza recipe that emphasizes the combination of plants and Real California cheeses, where meats or other non-cheese proteins are considered an optional garnish or condiment.
The REAL California Pizza – This signature Real California pizza recipe will include ingredients that showcase the best of the Golden State including REAL California Cheeses, toppings and crust.
Cal-Mex Pizza – A Cal-Mex pizza recipe will blend your interpretation of the culinary and flavor fusion of California and Mexican cuisines featuring Hispanic-style cheeses from California cheesemakers, including Asadero, Cotija, Cotija (Queso Anejo), Enchilado, Enchilado Anejo, Manchego, Menonita, Oaxaca, Panela, Queso Blanco Fresco (Queso Para Frier), Queso Fresco, and Requeson.
Limit – One Entry per person per Pizza Category but the same Recipe can be submitted in each of the 3 Pizza Categories if appropriate.
There will be two rounds to the Real California Pizza Contest:
All entries will be scored by an esteemed panel of champion pizza chefs, with the top four entries per category advancing to the final round.
Judging criteria includes:
– Pizza Name & Description – 15%
– Photographs – 15%
– Use of California Cheese – 35%
– Flavor Expectations – 35%
The twelve selected finalists – four in each category – will compete for $30,000 in the live bake-off event at the CIA at Copia facility in Napa, California on Wednesday, August 2, 2023.
The pizzas will be tasted and scored by our esteemed panel of champion pizza chefs. A single chef in each category will be selected as the Category Winner, and the top scoring entry of the three Category Winners will be selected as the Grand Prize Winner.
