A new year is the perfect time to add more vegetables and legumes to your diet. We’re looking for your go-to vegetarian recipe. This month’s winner will receive $500 and a Texas Co-op Power apron, and we’ll run our favorites in the January issue.

Texas Co-op Power contests are held monthly. Each month has its own theme and prize — and once annually the prize is large.
