At first glance, enset looks like a banana plant.

It has a thick trunk-like pseudostem, enormous paddle-shaped leaves and the unmistakable tropical appearance of a member of the banana family. A mature plant can tower over the people cultivating it.

Yet the fruit is not what Ethiopian farmers are waiting to eat.

Instead, the important food is hidden inside the massive plant itself.

For generations, communities in the Ethiopian highlands have scraped, grated, squeezed and fermented the starch-rich tissues of Ensete ventricosum, commonly called enset or the false banana, transforming it into several distinctive foods.

The best known is kocho, a fermented staple usually cooked into bread.

Much rarer is bulla.

Bulla is the fine starch recovered from liquid squeezed out during enset processing.
